My wonderful Grandma, Gaga, made crepes every night after dinner.  Her favorite way to eat them was with raspberry jam and cream. I’d have to agree, it’s my favorite too.  

This traditional French crepe recipe is a classic crepe recipe to make delicious sweet dessert (or breakfast!) crepes. 

I’ve altered the original recipe to be a healthy crepe recipe- the famous gluten and dairy-free crepes! I make this amazing dairy and gluten-free crepes recipe almost every weekend.  It’s a family favorite- if the teens approve of a healthified dessert, you know it’s great!

The paleo crepe recipe is made with almond flour and is also an excellent healthy dessert or breakfast.   I make paleo crepes if I feel like I need to watch the carbs and eat extra healthy.

Below is Gaga’s original French crepes recipe, followed by my gluten-free & dairy-free crepe revamp, and then a paleo crepes recipe.

Quick & Easy Crepe Recipe: French Crepe Ingredients

2 eggs

1 cup milk

2 T melted butter + more for cooking

¼ t salt

1 T sugar

1 C Flour

Blend all ingredients in a Vitamix or blender on LOW speed.  Heat a 10-inch pan over medium-high heat. Melt a little butter in the pan and swirl.  Pour in around ¼ cup of the crepe batter and swirl in the pan (while lifting off the heat), until the bottom is covered evenly.  Set the pan back down on medium heat for 1-2 minutes until golden, then use a large silicone spatula to loosen around the edges. Flip the crepe and cook on the other side for 1 minute.

*For a kids’ favorite Nutella Crepe Recipe, fill with Nutella and…

Top with fresh whipped cream.  Pour 1 pint of COLD whipping cream into a cold tall bowl.  Beat with an electric mixer on high, scraping down the sides, until soft peaks form.  Then add 2 T Sugar and 1/2 t vanilla.  Beat slowly until combined (just don’t overbeat- you will end up with butter.)

How to make crepes without milk or white flour?

These gluten and dairy-free crepes taste just as good (if not better) than the real thing.  I consider them to be the best crepe recipe ever!

Gluten-Free Crepe Recipe Without Milk

2 eggs

1 cup nondairy milk (almond, cashew, oat…)

¼ t salt

1 T coconut sugar

1 C gluten-free flour mix or use this combination:

¼ cup tapioca starch

¼ cup white rice flour

¼ cup brown rice flour

¼ cup potato starch

*Or you can use any gluten free flour mix without guar gum (and not a baking mix)

Ghee for cooking

Blend all the ingredients in a Vitamix or blender on LOW speed.  Heat a 10-inch pan over medium-high heat. Melt a little ghee in the pan and swirl.  Pour in approximately ¼ cup of the crepe batter and swirl in the pan (while lifting off the heat), until the bottom is covered evenly.  Set the pan back down on medium heat for 1-2 minutes until golden, then use a large silicone spatula to loosen around the edges. Flip the crepe and cook on the other side for 1 minute.  

Fill with Dairy-Free Nocciolata (chocolate hazelnut spread) or St. Dalfour Fruit Spread- raspberry or other (made without sugar)

I highly recommend making Dairy Free Whipped Cream!  

Put a can of coconut milk in the refrigerator for at least 24 hours.  * This must be regular, not low fat, and one of the following brands:  365 from Whole Foods, Native Forest, or Organic Thai Kitchen works also but it’s not quite as magical as the other two.

In a blender, scoop in (and pour) the refrigerated coconut milk,  1 T Maple sugar (or syrup) + 1 t vanilla extract.  If you would like it sweeter, you can add 10 drops of liquid stevia.  

With an electric mixer, beat on high speed for 1-2 minutes, scraping down the sides.  Place it in the refrigerator until ready to use.

I love my Vitamix!  One of the many things I use it for is measuring the milk and then blending the crepe batter well (on low)

For 1

2 eggs

¼ cup non dairy milk of choice

2 T Almond Flour

2 T Arrowroot Flour

Pinch of salt

1 t. Coconut Sugar (or use 4 drops of liquid stevia)
